The Persolja family has a long tradition of winegrowing as their estate has been growing grapes since 1909. They began bottling their own produce under a proprietary brand name only in 1991. The winery has eleven hectares (27.2 acres) of vineyards, growing mostly white grapes: Rebula, Beli Pinot, Sivi Pinot, Chardonnay, Tokaj, and Prosecco. Merlot and Cabernet Frank are their only red wines.
The average annual yield is fifty to sixty tons of grapes from which the Persolja winery produces four hundred hectoliters (10,568 gallons) of wine per year. Forty percent of their production is in the quality range, the rest high-quality. In the Brda area, blended wines are mostly in the quality range or table wines sold open. Persolja is one of the few wineries to produce a high-quality blend called Cvet, an attractive semi-dry wine. Still, most of their bottles contain varietal wines.
Dragica and Dejan Persolja devote most of their effort to Rebula: their aim is to produce the best that traditional Brda grape can offer and win this wine the recognition is deserves. This priority of their winery's production is evident in their "coat-of-arms": they have chosen the leaf of the Rebula vine for their trademark.
Chardonnay is another successful wine for the Persoljas, dry and fresh; their 1993 vintage was awarded a gold medal at the Ljubljana Wine Fair. Their Beli Pinot is also worth tasting.
This author's favourite is their Cabernet Frank: this richly coloured wine is very smooth, with a subdued gamy taste and no hint of aggressive tannin. Excellent while still young, the Persoljas' Modri Pinot gains a rich elegance after three to four years in the bottle.
The best Persolja vintages are 1993 and 1994.
