     The SimŸiŸ estate has a long tradition of winegrowing. Marjan and Salko SimŸiŸ have ten hectares (24.7 acres) of vineyards around Medana, most of them lying on the Italian side of the border. Their annual yield is one hundred tons, and the SimŸiŸ cellar produces 750 hectoliters (19,815 gallons) of wines annually, most in the high-quality range. Chardonnay and Sivi Pinot are their dominant white grapes, followed by Sauvignon, Rebula, Beli Pinot, and Tokaj. Their red wines are made from Cabernet Sauvignon and Merlot grapes.

     Their cellaring methods are both traditional and modern: aged and new barriques are used for Merlot and selected Chardonnays while fresh white wines are fermented in stainless steel vats.

     The simple black and white SimŸiŸ labels are a mark of immaculate winegrowing. Connoisseurs value their Sivi Pinot, Chardonnay, and Beli Pinot. The SimŸiŸ Sivi Pinot 1990 was awarded the Cordon d'Excellence; their Chardonnay has won two gold medals at the Ljubljana Wine Fair and the 1994 vintage was declared Champion by the Knights of the Burgerland-Pannonian Order. All wines from the SimŸiŸ cellar display a stressed varietal bouquet.

     Their rare specialty is Matias, a blend made from overripe grapes of Rumeni Muçkat, Sauvignon, and Chardonnay. This is a rather strong and rich wine with a powerful bouquet.

     The best vintages from the SimŸiŸ winery are 1983, 1988, 1993, and 1994.
