The keepers of the Dobrovo cellar proudly explain that theirs is the largest production cellar in Slovenia. It can store seventeen million liters (4.5 million gallons) of wine in oak barrels and stainless steel vats, and during harvest up to 1100 tons of grapes are processed daily.
KZ Goriska Brda - Dobrovo is a cooperative. It does not own vineyards but processes the output of 850 growers who cultivate over two thousand hectares (4942 acres) with 450,000 vines.
White wines are the staple product of this winery, comprising three quarters of the grapes harvested. Half of the yield from the vineyards of contract growers is the traditional Rebula, and Tokaj, Beli Pinot, and Chardonnay are well represented. Sivi Pinot and Sauvignon are less common, and the cellar also processes some Prosecco. Old vines that have almost disappeared from Brda have been reintroduced in the last decade: Verduc is the most successful, but the quantity is still low.
Merlot dominates among red wines. Cabernet Sauvignon is also produced in quantity, while Cabernet Frank and Modri Pinot are cultivated only on a few sites.
The Dobrovo winery offers wines in all quality ranges from open table wines to high-quality special editions.
Their prestige label is Bagueri. The wines in these elegant black bottles must satisfy the highest quality criteria: the yield is strictly limited, specific training and pruning of vines is mandatory, and the must and wine are given special care. The Bagueri series offers red and white wines: the Merlot and Tokaj are particularly appreciated by connoisseurs.
Rebula is the winery's primary varietal wine. The must is cooled during fermentation in stainless steel vats to produce a fresh, lively wine with a noble unobtrusive bouquet and subdued golden-yellow colour. This wine will keep but does not gain from aging.
The Dobrovo Tokaj is a true connoisseur's wine, with low acids and a characteristic almond flavour. Tokaj is lively and fresh when young but gains a special nobility with aging: the Dobrovo cellar has perfected this risky process and regularly offers Tokaj from its archives.
Red wines from the Dobrovo winery are dry and not too heavy. Cabernet Sauvignon and Modri Pinot benefit from somewhat protracted maceration, and these wines must be aged in bottles for at least three to four years to develop their specific velvety flavour.
KZ Goriska Brda - Dobrovo produces a selection of sparkling wines in accordance with the Charmat method. Most of these are based on blends of Chardonnay, Rebula, and Beli Pinot. A sparkling wine made from Prosecco is pleasantly dry and refreshing, a good product made from wine that is not particularly appreciated as a varietal still wine. The pinnacle of the winery's sparkling wines is the exclusive dry Contessa Bagueri.
The Dobrovo winery maintains a large wine archive, and wines up to thirty years old are on regular sale in the archive shop.
